Dice the chicken breast, half of a carrot, and half a yellow onion into small, uniform pieces.
In a pan over medium heat, add 1 tablespoon of vegetable oil. Add diced chicken, and cook for 5 minutes until browned and cooked through.
Add the diced onion and carrot to the pan with the chicken, cooking for an additional 3 minutes or until the vegetables are softened.
Stir in the frozen peas and continue to cook for 2 minutes.
Add the cooked rice to the pan, mixing well to combine with the chicken and vegetables. Pour in the soy sauce and 2 tablespoons of ketchup, stirring until the rice is evenly coated and heated through. Set the fried rice aside.
In a bowl, whisk together the eggs, unsweetened almond milk, salt, and black pepper until smooth.
Heat the remaining tablespoon of vegetable oil in a non-stick skillet over medium-low heat. Pour half of the egg mixture into the pan, spreading it evenly to create a thin omelet.
Cook the omelet until the edges are set and the center is slightly runny, approximately 2 minutes. Place half of the fried rice mixture onto one side of the omelet, carefully folding the other side over to cover the rice. Gently slide the omurice onto a plate.
Repeat the process with the remaining egg mixture and rice to create a second serving.
Drizzle the remaining tablespoon of ketchup over the omurice for garnish. Top with chopped green onions and toasted sesame seeds. Serve immediately.
