  • 200 grams Chicken breast

  • 0.5 cup Frozen peas
  • 0.5 medium Yellow onion
  • 2 tablespoons Soy sauce
  • 3 tablespoons Ketchup
  • 1 cup Cooked shredded chicken
  • 2 tablespoons Vegetable oil
  • 4 Large eggs
  • 0.25 cup Unsweetened almond milk
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 2 tablespoons Green onions
  • 1 tablespoon Toasted sesame seeds

Directions

Step 1

Dice the chicken breast, half of a carrot, and half a yellow onion into small, uniform pieces.

Step 2

In a pan over medium heat, add 1 tablespoon of vegetable oil. Add diced chicken, and cook for 5 minutes until browned and cooked through.

Step 3

Add the diced onion and carrot to the pan with the chicken, cooking for an additional 3 minutes or until the vegetables are softened.

Step 4

Stir in the frozen peas and continue to cook for 2 minutes.

Step 5

Add the cooked rice to the pan, mixing well to combine with the chicken and vegetables. Pour in the soy sauce and 2 tablespoons of ketchup, stirring until the rice is evenly coated and heated through. Set the fried rice aside.

In a bowl, whisk together the eggs, unsweetened almond milk, salt, and black pepper until smooth.
