Ingredients

  • 3 cups All-purpose flour
  • 1 tablespoon Baking powder
  • 1 teaspoon Salt

  • 1 cup Granulated sugar
  • 1 cup Coconut milk (canned, full fat)
  • 2 Large eggs
  • 1 teaspoon Vanilla extract
  • 4 tablespoons Vegetable oil
  • 4 cups Vegetable oil (for frying)
  • 0.5 cup Powdered sugar (optional for dusting)

Directions

Step 1

In a large mixing bowl, whisk together the all-purpose flour, baking powder, salt, and ground nutmeg.

In another bowl, beat the granulated sugar and eggs until the mixture is pale and thick. This should take about 2-3 minutes.

Step 3

Add the coconut milk, vanilla extract, and 4 tablespoons of vegetable oil to the egg and sugar mixture and mix until well combined.

Gradually add the dry flour mixture to the wet ingredients, stirring until just combined. Do not over mix.
