Ingredients

  • 12 pieces medjool dates, pitted
  • 1 cup raw almonds
  • 1 cup raw walnuts
  • 0.5 cup unsweetened cocoa powder
  • 0.25 cup natural peanut butter
  • 1 teaspoon vanilla extract
  • 0.25 teaspoon sea salt
  • 2 tablespoons coconut oil, melted
  • 2 tablespoons chia seeds
  • 0.5 cup shredded coconut

Directions

Step 1

Begin by soaking the pitted medjool dates in warm water for about 10 minutes to soften them.

Step 2

While the dates are soaking, place the raw almonds and walnuts into a food processor. Pulse until they are finely ground but not pasty.

Step 3

Drain the dates and add them to the food processor along with the unsweetened cocoa powder, natural peanut butter, vanilla extract, sea salt, and melted coconut oil.

Step 4

Process the mixture until it is well combined and forms a sticky dough-like consistency. You may need to scrape down the sides of the food processor a few times.

Step 5

Add the chia seeds and half of the shredded coconut to the mixture, and pulse a few times until evenly distributed.

Step 6

Prepare a baking sheet or a plate and line it with parchment paper to prevent sticking.

Step 7

Using your hands, take small amounts of the mixture and roll it into balls, about the size of a tablespoon, and place them onto the prepared baking sheet.

Step 8

Once all the mixture is shaped into balls, roll them in the remaining shredded coconut to coat the exterior. This adds extra flavor and prevents them from sticking together.

Step 9

Place the energy balls in the refrigerator for at least 30 minutes to firm up.

Step 10

These energy balls can be stored in an airtight container in the refrigerator for up to two weeks or frozen for up to three months.
