Ingredients

  • 300 grams All-purpose flour
  • 2 teaspoons Baking powder
  • 0.5 teaspoon Salt
  • 100 grams Granulated sugar
  • 1 teaspoon Vanilla extract
  • 1 large Egg
  • 150 grams Dairy-free margarine (or vegan butter), softened
  • 150 grams Apricot jam
  • 200 grams Brown sugar
  • 3 tablespoons Water
  • 200 grams Dairy-free margarine (or vegan butter)
  • 400 grams Chopped mixed nuts (such as hazelnuts, almonds, walnuts)
  • 150 grams Dark chocolate, dairy-free
  • 2 teaspoons Coconut oil

Directions

Step 1

Preheat your oven to 350°F (180°C). Line a 9x13 inch (23x33 cm) baking pan with parchment paper.

Step 2

In a large mixing bowl, combine the flour, baking powder, salt, granulated sugar, vanilla extract, egg, and softened dairy-free margarine. Mix until a soft dough forms.

Press the dough evenly into the bottom of the prepared baking pan to form the base.

Spread the apricot jam over the dough base evenly.
