Ingredients

  • 250 grams Rotini pasta
  • 200 grams Cherry tomatoes
  • 1 medium Cucumber

  • 1 medium Red bell pepper
  • 100 grams Pitted black olives
  • 20 grams Fresh parsley
  • 60 ml Olive oil
  • 30 ml Apple cider vinegar
  • 1 tablespoon Dijon mustard
  • 1 large Garlic clove
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper

Directions

Step 1

Cook the rotini pasta according to package instructions until al dente. Drain and rinse under cold water to stop the cooking process, then set aside.
