Ingredients

  • 2 cups dried black-eyed peas
  • 1 medium, chopped red bell pepper
  • 1 medium, chopped onion
  • 1 small, deseeded and chopped scotch bonnet pepper
  • 2 large, chopped garlic cloves
  • 1 teaspoon salt
  • 1 teaspoon baking powder
  • 0.5 cup water
  • 2 cups sunflower oil

Directions

Step 1

Place the dried black-eyed peas in a large bowl and cover with plenty of water. Soak for 5 hours or overnight to soften them.

Step 2

Drain the soaked black-eyed peas and remove the skins by rubbing the beans between your palms. Rinse and drain again to remove the skins completely.

Step 3

In a blender, combine the peeled black-eyed peas, chopped red bell pepper, onion, scotch bonnet pepper, garlic cloves, and 1/2 cup of water.

Blend the mixture to a smooth thick paste, adding a little more water if necessary to aid blending, but be cautious not to make it too watery.
