Ingredients

  • 3 sheets Dairy-free puff pastry sheets
  • 400 ml Coconut milk (full-fat, canned)
  • 200 ml Almond milk
  • 60 g Cornstarch
  • 100 g Granulated sugar
  • 1 tsp Vanilla extract
  • 1 pinch Salt
  • 50 g Icing sugar

Directions

Step 1

Preheat your oven to 200°C (392°F).

On a floured surface, roll out the puff pastry sheets to about 3 mm thickness. Prick the sheets all over with a fork to prevent them from puffing excessively.

Place the puff pastry sheets on baking trays lined with parchment paper. Cover them with another layer of parchment paper and place another baking tray on top to keep them flat as they bake.

Bake in the preheated oven for 15-20 minutes, or until golden brown and crisp. Remove from the oven and allow to cool completely.

In a medium saucepan, combine the coconut milk, almond milk, and granulated sugar. Whisk together and place over medium heat, stirring frequently.
