Ingredients

  • 2 tablespoons Olive oil
  • 3 large Garlic cloves
  • 1 tablespoon Ginger
  • 250 grams Button mushrooms
  • 150 grams Shiitake mushrooms
  • 1 medium Bell pepper
  • 3 tablespoons Soy sauce (gluten-free if needed)
  • 1 tablespoon Rice vinegar
  • 1 teaspoon Sesame oil
  • 1 teaspoon Cornstarch
  • 2 tablespoons Water
  • 2 stalks Green onions
  • 1 tablespoon Sesame seeds
  • 0.5 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 150 grams Broccoli florets

Directions

Step 1

Peel and finely chop the garlic cloves. Grate or finely chop the ginger. Set aside.

Step 2

Clean the button and shiitake mushrooms with a damp cloth and slice them thinly.

Step 3

Chop the bell pepper into thin strips and chop the green onions, keeping the white and green parts separate.

Step 4

In a small bowl, mix soy sauce, rice vinegar, sesame oil, cornstarch, and water to create the sauce. Stir well to dissolve the cornstarch completely.

Step 5

Heat olive oil in a large skillet or wok over medium heat.

Step 6

Add chopped garlic, ginger, and the white parts of the green onions to the pan. Sauté for 1 minute until fragrant.

Step 7

Increase the heat to high and add sliced mushrooms, bell pepper, and broccoli florets to the pan. Stir-fry for about 5 minutes until the vegetables begin to soften.

Step 8

Pour the prepared sauce over the vegetables. Stir well to combine and coat everything evenly.

Continue to cook for another 3-4 minutes until the sauce thickens and the vegetables are cooked but still crisp.

Season with salt and black pepper to taste.

Remove the stir-fry from heat and garnish with the green parts of the green onions and sesame seeds before serving.
