Ingredients

  • 5 medium potatoes
  • 3 tablespoons olive oil
  • 1 large onion
  • 3 cloves garlic
  • 500 grams ground beef or lamb
  • 2 tablespoons tomato paste
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 400 milliliters coconut milk
  • 2 tablespoons cornstarch
  • 0.25 teaspoon nutmeg
  • 3 tablespoons nutritional yeast

Directions

Step 1

Preheat your oven to 180°C (350°F).

Step 2

Peel and slice the potatoes into 1/4-inch thick rounds.

Step 3

In a large pan, heat 2 tablespoons of olive oil over medium heat. Add the sliced potatoes in batches, cooking until lightly golden on both sides. Set aside on paper towels to drain excess oil.

In the same pan, add the remaining tablespoon of olive oil. Add the chopped onion and minced garlic, sautéing until the onion is translucent, about 5 minutes.

Add the ground beef or lamb to the pan, breaking it apart with a wooden spoon. Cook until browned, about 8 minutes.
