Ingredients

  • 8 pieces chicken thighs, skinless and boneless
  • 3 tablespoons olive oil
  • 1 large onion, finely chopped
  • 4 pieces garlic cloves, minced
  • 2 teaspoons ground cumin
  • 2 teaspoons ground coriander
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground ginger
  • 1 teaspoon paprika
  • 1 teaspoon turmeric
  • 1 teaspoon sea salt
  • 0.5 teaspoon black pepper
  • 2 cups chicken stock (dairy-free)
  • 1 can (14 ounces) canned tomatoes, chopped
  • 0.5 cup dried apricots, chopped
  • 0.25 cup almond slices, toasted
  • 2 tablespoons fresh cilantro, chopped
  • 1 large lemon, juice and zest

Directions

Step 1

Heat 2 tablespoons of olive oil in a large skillet or Dutch oven over medium-high heat.

Step 2

Add the chicken thighs and sear for about 4 minutes on each side until browned. Remove them from the pan and set aside.

Step 3

In the same pan, add the remaining tablespoon of olive oil. Sauté the onions for 5 minutes until they are soft and translucent.
