Ingredients

  • 1 cup Creamy peanut butter
  • 1 cup Brown sugar
  • 0.5 cup Granulated sugar
  • 2 Large eggs
  • 1 teaspoon Vanilla extract
  • 1 teaspoon Baking soda
  • 0.5 teaspoon Salt
  • 3 cups Old-fashioned oats
  • 1 cup Dairy-free chocolate chips
  • 0.5 cup Raisins
  • 0.5 cup Chopped walnuts (optional)

Directions

Step 1

Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper or silicone baking mats.

Step 2

In a large mixing bowl, combine the creamy peanut butter, brown sugar, and granulated sugar. Mix until smooth and well combined.

Step 3

Add in the eggs and vanilla extract, and mix until the ingredients are fully incorporated.

Step 4

Sprinkle in the baking soda and salt, and mix to combine.

Step 5

Stir in the oats until evenly distributed throughout the dough.

Step 6

Fold in the dairy-free chocolate chips, raisins, and walnuts (if using) until they are well mixed into the cookie dough.

Step 7

Using a tablespoon or a cookie scoop, drop rounded balls of dough onto the prepared baking sheets, spacing them about 2 inches apart.

Step 8

Gently flatten each dough ball slightly with the back of a spoon or your fingers to form disk-shaped cookies.

Step 9

Bake in the preheated oven for 10-12 minutes, or until the cookies are set at the edges and lightly golden brown.

Step 10

Remove from the oven and allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
