Ingredients

  • 2.5 cups All-purpose flour
  • 2 teaspoons Baking soda
  • 1 teaspoon Ground cinnamon
  • 1 teaspoon Ground ginger
  • 0.5 teaspoon Ground cloves
  • 0.5 teaspoon Salt
  • 0.75 cup Coconut oil (solidified)
  • 1 cup Light brown sugar
  • 0.25 cup Unsulphured molasses
  • 1 whole Large egg
  • 1 teaspoon Vanilla extract
  • 0.25 cup Granulated sugar (for rolling)

Directions

Step 1

Preheat your oven to 375°F (190°C) and line two baking sheets with parchment paper.

Step 2

In a medium bowl, whisk together the all-purpose flour, baking soda, ground cinnamon, ground ginger, ground cloves, and salt. Set aside.

Step 3

In a large mixing bowl or the bowl of a stand mixer, beat the solidified coconut oil and light brown sugar together until the mixture is light and fluffy, about 3 to 4 minutes.

Step 4

Add the unsulphured molasses, large egg, and vanilla extract to the coconut oil mixture. Beat until fully combined.

Step 5

Gradually add the dry ingredients to the wet ingredients, mixing until a soft dough forms. The dough should be slightly sticky but firm.

Step 6

Scoop tablespoons of the dough and roll them into balls. Roll each dough ball in the granulated sugar to coat.

Step 7

Place the sugar-coated dough balls on the prepared baking sheets, spacing them about 2 inches apart to allow for spreading.

Step 8

Bake the cookies in the preheated oven for 8 to 10 minutes, or until the edges are set and the centers are still soft.

Step 9

Remove from the oven and let the cookies cool on the baking sheets for 5 minutes, then transfer them to a wire rack to cool completely.
