Soak the black-eyed peas in water for at least 30 minutes to loosen the skins.
Rub the soaked beans between your palms to remove the skins, rinse thoroughly until all skins are removed.
Drain the beans and pour them into a blender.
Add red bell peppers, tomatoes, onion, and Scotch bonnet pepper into the blender with the beans.
Add half of the water and blend into a smooth batter. Add more water if necessary to achieve a slightly thick batter consistency.
Pour the blended mixture into a large mixing bowl.
Stir in vegetable oil, salt, smoked paprika, and ground crayfish, mixing until well incorporated.
