Begin by soaking the black-eyed peas in water for at least 6 hours or overnight to soften them.
Drain the soaked peas and rub them between your palms to remove the skins. You can do this a few times until most of the skins are off, then rinse and drain.
In a blender, combine the skinned black-eyed peas, red bell peppers, scotch bonnet pepper, and onions. Add about 200 ml of water and blend until the mixture is smooth and thick.
Transfer the blended mixture to a large mixing bowl.
Gradually add the vegetable stock while stirring until you reach a smooth, slightly thinner consistency.
Next, stir in the sunflower oil, salt, ground white pepper, and the crumbled bouillon cube. Mix everything thoroughly to combine and ensure the oil doesn’t separate.
Prepare your steaming method. If using banana leaves, cut them into manageable sizes, rinse, and form them into pockets by folding and securing with toothpicks. Alternatively, grease Moi Moi containers.
Fill each container or banana leaf pocket with the bean mixture, leaving about an inch at the top to allow for expansion during steaming.
Arrange the filled containers in a steamer or large pot with a steaming rack. Add enough water to the base of the pot but ensure it doesn’t touch the Moi Moi.
Cover the Moi Moi with additional banana leaves or foil to trap the steam.
Steam on medium heat for approximately 60 minutes, ensuring to check the water level occasionally and replenish it as needed to maintain steaming.
To confirm they are done, insert a toothpick in the center, and it should come out clean.
Allow the Moi Moi to cool slightly before serving. They can be enjoyed warm as a standalone dish or paired with rice or custard.
