Ingredients

  • 1 package Dairy-free puff pastry sheets
  • 1 medium Apple
  • 1 medium Pear
  • 0.5 cup Blueberries
  • 0.5 cup Strawberries
  • 1 tablespoon Lemon juice
  • 2 tablespoons Brown sugar
  • 2 teaspoons Cornstarch
  • 0.5 teaspoon Ground cinnamon
  • 1 teaspoon Vanilla extract
  • 2 tablespoons Almond milk
  • 1 tablespoon Maple syrup

Directions

Step 1

Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.

Step 2

Thaw the dairy-free puff pastry sheets as per the package instructions. Carefully unfold and lay them on a lightly floured surface.

Step 3

Core and dice the apple and pear into small cubes. Hull and quarter the strawberries.

Step 4

In a medium bowl, combine the apple, pear, blueberries, and strawberries. Add lemon juice, brown sugar, cornstarch, ground cinnamon, and vanilla extract. Mix gently until the fruits are well coated.

Step 5

Cut the puff pastry sheet into 6 equal squares. Spoon a generous tablespoon of fruit mixture onto each square, leaving a small border around the edges.

Step 6

Brush the edges of each square with almond milk to help seal the pastries.

Step 7

Fold one corner of each square over to the opposite corner to form a triangle. Press the edges firmly with a fork to seal.

Step 8

Transfer the triangles to the prepared baking sheet. Brush the tops with a mixture of almond milk and maple syrup for a golden finish.

Step 9

Bake for 20-25 minutes or until the pastries are puffed and golden brown.

Step 10

Allow the pastries to cool slightly before serving. Serve warm or at room temperature.
