Ingredients

  • 2 sheets Dairy-free puff pastry sheets
  • 2 cups Mixed berries (blueberries, raspberries, strawberries)
  • 1 tablespoon Granulated sugar
  • 1 tablespoon Cornstarch
  • 1 teaspoon Lemon juice
  • 0.5 teaspoon Vanilla extract
  • 1 tablespoon Almond milk
  • 2 tablespoons Powdered sugar

Directions

Step 1

Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.

Step 2

In a medium bowl, combine mixed berries, granulated sugar, cornstarch, lemon juice, and vanilla extract. Gently toss until the berries are well coated and set aside.

Step 3

Roll out the dairy-free puff pastry sheets on a lightly floured surface to about 1/8-inch thickness. Cut each sheet into four equal squares.

Place a heaping tablespoon of the berry mixture in the center of each square.
