Ingredients

  • 500 ml Coconut milk
  • 100 g Jaggery
  • 1 tablespoon Cornstarch
  • 150 ml Coconut yogurt
  • 1 teaspoon Cardamom powder
  • 2 tablespoons Almond slices
  • 1 tablespoon Pistachios, chopped

Directions

Step 1

In a medium saucepan, pour the coconut milk and heat it over medium heat until it starts to gently simmer. Stir occasionally to prevent it from sticking.

Add the jaggery to the warm coconut milk, and stir well until the jaggery completely dissolves. Continue cooking for about 5 minutes, allowing the mixture to reduce slightly.

In a small bowl, dissolve the cornstarch in 1 tablespoon of water to form a smooth slurry. Add this to the coconut milk mixture.

Step 4

Reduce the heat to low and continue to stir the coconut milk mixture until it thickens slightly, for about 5 more minutes. This will help emulate the thick consistency of traditional Mishti Doi.

Turn off the heat and allow the mixture to cool to room temperature.

Once cooled, add the coconut yogurt and cardamom powder to the coconut milk mixture. Whisk thoroughly to ensure the yogurt is evenly incorporated.

Pour the mixture into individual earthen pots or small bowls.

Cover the pots or bowls with a cloth, and let them sit in a warm place for about 6-8 hours or until set. This allows the flavors to mature and the mixture to firm up slightly.
