Ingredients

  • 12 pieces Mini whole grain rolls or slider buns
  • 1.5 cups Hummus
  • 1 large Cucumber, thinly sliced
  • 12 slices Smoked turkey breast, thinly sliced
  • 2 pieces Avocado, pitted and sliced
  • 12 pieces Cherry tomatoes, halved
  • 1 cup Alfalfa sprouts
  • 2 tablespoons Olive oil
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 1 tablespoon Fresh lemon juice

Directions

Step 1

Slice the mini rolls in half horizontally and set aside.

Step 2

In a small bowl, combine olive oil, salt, black pepper, and lemon juice. Stir well to make a simple dressing.

Step 3

Spread a generous amount of hummus on the bottom half of each mini roll.

Step 4

Layer each sandwich with a slice of smoked turkey breast.
