Ingredients

  • 2 cups All-purpose flour
  • 1 teaspoon Salt
  • 5 tablespoons Vegetable oil
  • 0.75 cup Water
  • 3 medium Onions
  • 1 medium Green chili
  • 1 teaspoon Cumin seeds
  • 1 teaspoon Garam masala
  • 1 teaspoon Ground coriander
  • 0.5 teaspoon Turmeric powder
  • 0.5 teaspoon Red chili powder
  • 2 tablespoons Fresh coriander leaves
  • 1 tablespoon Lemon juice
  • 0 Oil for frying

Directions

Step 1

In a large mixing bowl, combine 2 cups of all-purpose flour and 1 teaspoon of salt. Add 5 tablespoons of vegetable oil and mix it in by rubbing the flour and oil between your fingers until the mixture resembles coarse breadcrumbs.

Step 2

Gradually add 0.75 cup of water to the flour mixture, kneading it into a firm dough. Cover the dough with a damp cloth and set aside for at least 15 minutes.

Step 3

Finely chop 3 medium onions and 1 medium green chili. Set aside.

Step 4

Heat 2 tablespoons of vegetable oil in a pan over medium heat. Add 1 teaspoon of cumin seeds and let them splutter.

Add the chopped onions and green chili to the pan. Sauté for about 5-7 minutes until the onions are soft and translucent.

Add 1 teaspoon of garam masala, 1 teaspoon of ground coriander, 0.5 teaspoon of turmeric powder, and 0.5 teaspoon of red chili powder to the onion mixture. Stir well to incorporate the spices evenly.

Cook the spiced onion mixture for another 2-3 minutes, then remove from heat.

Finely chop 2 tablespoons of fresh coriander leaves and add them along with 1 tablespoon of lemon juice to the onion mixture. Mix well and set aside to cool.

Divide the dough into 10-12 equal portions. Roll each portion into a ball.

Roll out each ball into a thin oval, approximately 6 inches long. Cut each oval in half to form two semi-circles.

Step 11

Take one semi-circle, fold it into a cone shape, and seal the edge using water. Ensure there are no gaps.

Step 12

Fill the cone with the spiced onion mixture up to two-thirds full. Seal the top edge using water.

Step 13

Repeat with the remaining dough and filling.

Step 14

Heat oil in a deep frying pan over medium heat. Once hot, carefully add the samosas in batches, frying them until they are golden brown and crispy.

Step 15

Remove the samosas and drain on paper towels.

Step 16
