  • 2.5 cups All-purpose flour
  • 1 cup Coconut oil
  • 6 tablespoons Cold water
  • 1 teaspoon Salt
  • 4 large Granny Smith apples
  • 0.5 cup Sugar
  • 1 teaspoon Ground cinnamon
  • 0.25 teaspoon Ground nutmeg
  • 1 tablespoon Lemon juice
  • 1 tablespoon Cornstarch
  • 1 teaspoon Vanilla extract

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

In a large bowl, whisk together the flour and salt. Add the solid coconut oil, using a fork or pastry cutter to blend until the mixture resembles coarse crumbs.

Slowly add the cold water, one tablespoon at a time, mixing until the dough just holds together.

Step 4

Form the dough into a ball, wrap it in plastic wrap, and refrigerate for at least 15 minutes.

While the dough chills, peel, core, and chop the apples into small cubes.

In a medium bowl, combine the chopped apples with sugar, cinnamon, nutmeg, lemon juice, cornstarch, and vanilla extract. Mix well to combine and set aside.
