Ingredients

  • 500 g ground beef or lamb
  • 2 tbsp olive oil
  • 1 medium onion, finely chopped
  • 3 garlic cloves, minced
  • 1 tbsp fresh ginger, grated
  • 400 g canned chopped tomatoes
  • 400 ml coconut milk
  • 2 tbsp curry powder
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1 tsp ground turmeric
  • 0.5 tsp red chili powder (optional)
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 2 tbsp fresh cilantro, chopped
  • 0.5 lemon, juiced

Directions

Step 1

Heat the olive oil in a large pan over medium heat. Add the chopped onion and sauté for 3-4 minutes until translucent.

Step 2

Stir in the minced garlic and grated ginger, cooking for an additional 1-2 minutes until fragrant.

Step 3

Add the minced meat to the pan, breaking it apart with a wooden spoon. Cook until it is browned and no longer pink.

Step 4

Mix in the curry powder, ground cumin, ground coriander, ground turmeric, and optional red chili powder. Stir well to coat the meat in spices.

Step 5

Pour in the canned chopped tomatoes and coconut milk, stirring everything together. Increase the heat to high until the mixture starts to boil, then reduce to a simmer.

Step 6

Season with salt and black pepper, cover with a lid, and let the curry simmer for about 20 minutes, stirring occasionally.

Step 7

Once the curry has thickened to your liking, remove from heat and stir in the fresh lemon juice.

Step 8

Garnish with chopped cilantro before serving. Serve hot with rice, naan, or your preferred accompaniment.
