Ingredients

  • 200 g short-grain rice
  • 400 ml coconut milk
  • 600 ml almond milk
  • 50 ml maple syrup
  • 1 tsp vanilla extract
  • 1 cinnamon stick
  • 1 pinch of salt
  • 100 g fresh berries (optional)
  • 50 g chopped nuts (optional)

Directions

Step 1

Rinse the short-grain rice under cold water until the water runs clear to remove excess starch.

Step 2

In a medium-sized saucepan, combine the coconut milk, almond milk, and a pinch of salt. Bring the mixture to a gentle simmer over medium heat.

Step 3

Stir in the rinsed rice, cinnamon stick, and vanilla extract into the simmering milk mixture.

Step 4

Reduce the heat to low and cover the saucepan with a lid. Allow the rice to cook slowly, stirring occasionally to prevent sticking, for about 30-35 minutes or until the rice is tender and has absorbed most of the liquid.

Step 5

Once the rice is cooked, remove the saucepan from the heat and discard the cinnamon stick. Stir in the maple syrup for sweetness.

Step 6

Let the milchreis sit for 5 minutes allowing it to thicken further.

Step 7

Serve warm, topped with fresh berries and chopped nuts for added texture and flavor, if desired.
