  • 6 medium Yukon Gold potatoes
  • 2 tablespoons Olive oil
  • 3 units Garlic cloves, minced

  • 1 teaspoon Thyme leaves
  • 1.5 cups Oat milk
  • 1 cup Vegetable broth
  • 2 tablespoons Cornstarch
  • 0.5 cup Nutritional yeast
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 2 tablespoons Chopped fresh parsley (optional for garnish)

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

Peel the Yukon Gold potatoes and slice them thinly, about 1/8 inch thick, using a sharp knife or mandoline.

Step 3

In a large pan, heat olive oil over medium heat. Add the minced garlic and sauté for 1-2 minutes until fragrant.

Stir in the nutmeg and thyme leaves and cook for another minute.
