  • 2 pieces Vegan sausage patties
  • 100 ml Plant-based eggs
  • 50 grams Spinach leaves
  • 1 whole Avocado
  • 1 whole Tomato
  • 1 tablespoon Olive oil
  • 1 pinch Salt
  • 1 pinch Black pepper

Directions

Step 1

Begin by slicing the English muffins into halves and toasting them until golden brown, either in a toaster or on a skillet.

Step 2

Heat the olive oil in a skillet over medium heat.

Step 3

Add the vegan sausage patties to the skillet and cook them for 3-4 minutes on each side, until they are browned and cooked through.

Step 4

In a small bowl, whisk the plant-based eggs with a pinch of salt and black pepper.

Pour the plant-based eggs into the skillet and stir them gently to create scrambled eggs. Cook for about 3 minutes until they are set, then remove from the heat.
