Ingredients

  • 1 cup farro
  • 3 cups water
  • 1.5 cups cherry tomatoes, halved

  • 1 small red onion, finely chopped
  • 0.5 cup kalamata olives, pitted and sliced
  • 0.5 cup fresh parsley, chopped
  • 0.25 cup fresh mint, chopped
  • 0.25 cup extra virgin olive oil
  • 0.25 cup lemon juice, freshly squeezed
  • 2 cloves garlic, minced
  • 2 teaspoons dijon mustard
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper

Directions

Step 1

Rinse 1 cup of farro under cold water.

Step 2

In a medium saucepan, combine the rinsed farro and 3 cups of water. Bring to a boil over high heat.

Reduce the heat to low and let it simmer for about 25-30 minutes or until the farro is tender but still chewy.

Drain any excess water and set the farro aside to cool slightly.
