  • 1 cup, cooked brown rice
  • 2 tablespoons olive oil
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 large, sliced avocado
  • 1 cut into wedges fresh lime
  • 0.25 cup, chopped fresh cilantro
  • 1 cup dairy-free shredded cheese
  • 0.5 cup salsa

Directions

Step 1

In a large skillet over medium heat, warm 1 tablespoon of olive oil. Add the chopped onion and sauté for 3-4 minutes until softened.
