Ingredients

  • 1.5 cups All-purpose flour
  • 2 tablespoons Matcha green tea powder
  • 1 tablespoon Baking powder
  • 0.5 teaspoon Baking soda
  • 0.25 teaspoon Salt
  • 0.75 cup Granulated sugar
  • 0.5 cup Coconut oil, melted
  • 1 cup Unsweetened almond milk
  • 1 tablespoon Apple cider vinegar
  • 1 teaspoon Vanilla extract

Directions

Step 1

Preheat your oven to 350°F (175°C). Grease and line an 8-inch round cake pan with parchment paper.

Step 2

In a large mixing bowl, whisk together the all-purpose flour, matcha powder, baking powder, baking soda, and salt until evenly combined.

Step 3

In a separate medium bowl, combine the granulated sugar, melted coconut oil, almond milk, apple cider vinegar, and vanilla extract. Mix until the sugar is mostly dissolved.

Step 4

Pour the wet ingredients into the bowl with the dry ingredients. Gently mix with a spatula or spoon until just combined. Be careful not to overmix, as this can make the cake dense.

Step 5

Pour the cake batter into the prepared cake pan, smoothing the top with the back of a spoon or a spatula.

Step 6

Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted into the center of the cake comes out clean.

Step 7

Allow the cake to cool in the pan for about 10 minutes, then remove it from the pan and place it on a wire rack to cool completely.

Step 8

Once cooled, the cake can be served plain, dusted with additional matcha powder, or garnished with fresh fruits. Enjoy!
