Ingredients

  • 2 kg Whole Carp (or Sea Bass)
  • 60 ml Olive Oil
  • 120 ml Lemon Juice
  • 4 units Garlic Cloves, minced
  • 1 tsp Turmeric
  • 1 tsp Cumin
  • 1 tsp Coriander Powder
  • 1 tsp Paprika
  • 2 tsp Salt
  • 1 tsp Freshly Ground Black Pepper
  • 2 units Tomatoes, sliced
  • 1 unit Onion, sliced
  • 3 tbsp Fresh Dill, chopped
  • 3 tbsp Fresh Parsley, chopped

Directions

Step 1

Clean the fish thoroughly, removing scales and innards if necessary. Pat dry with a paper towel.

Step 2

In a small bowl, mix the olive oil, lemon juice, minced garlic, turmeric, cumin, coriander, paprika, salt, and black pepper to create a marinade.

Step 3

Make diagonal slashes on the fish sides, about 1 inch apart, so the marinade can permeate the flesh. Place fish on a large, flat surface.

Step 4

Evenly coat the fish with marinade, ensuring it gets inside the slashes and the cavity. Cover and let rest for at least 20 minutes to absorb flavors.

Garnish with freshly chopped dill and parsley before serving. Serve the masgouf with grilled vegetables on the side, along with lemon wedges.
