Ingredients

  • 2 large ripe mangoes
  • 400 ml coconut cream
  • 2 tablespoons maple syrup
  • 1 teaspoon vanilla extract
  • 1 teaspoon agar-agar powder
  • 2 tablespoons water

Directions

Step 1

Chill the coconut cream in the refrigerator for at least 4 hours or overnight. This will help separate the cream from the liquid.

Step 2

Peel and pit the mangoes, then chop the flesh into small pieces.

Step 3

Blend the mango pieces in a blender or food processor until smooth, creating a mango puree. Set aside.

Step 4

In a small saucepan, combine the agar-agar powder and water. Stir well and bring to a boil over medium heat, stirring continuously. Once it boils, lower the heat and simmer for 2-3 minutes until the agar-agar dissolves completely. Set aside to cool slightly.

Step 5

Open the chilled coconut cream can and scoop out the thick cream into a large mixing bowl, leaving the liquid behind. Using a hand mixer or whisk, whip the coconut cream until smooth and fluffy.

Step 6

Gently fold in the mango puree, maple syrup, and vanilla extract into the whipped coconut cream until combined.

Step 7

Add the slightly cooled agar-agar solution to the mango and coconut mixture. Gently fold until evenly incorporated.

Step 8

Transfer the mixture into serving cups or bowls.

Step 9

Refrigerate the mango mousse for at least 2 hours or until set.

Step 10

Serve chilled and enjoy!
