Ingredients

  • 1.5 cups All-purpose flour
  • 1.5 teaspoons Baking powder
  • 0.5 teaspoons Baking soda
  • 0.25 teaspoons Salt
  • 1 cup Ripe mango, pureed
  • 0.75 cup Granulated sugar
  • 0.5 cup Coconut oil, melted
  • 0.5 cup Unsweetened coconut milk
  • 1 teaspoon Vanilla extract
  • 1 tablespoon Apple cider vinegar

Directions

Step 1

Preheat your oven to 350°F (175°C) and lightly grease an 8-inch round cake pan with a little coconut oil.

Step 2

In a medium-sized bowl, whisk together the all-purpose flour, baking powder, baking soda, and salt. Set aside.

Step 3

In a separate large bowl, combine the mango puree, granulated sugar, and melted coconut oil. Whisk until the sugar begins to dissolve, about 1-2 minutes.

Step 4

Add the coconut milk and vanilla extract to the wet ingredients and mix until smooth and well combined.

Step 5

Pour the dry ingredients into the wet mixture gradually, stirring gently with a spatula or wooden spoon until just combined. Be careful not to overmix the batter.

Step 6

Quickly stir in the apple cider vinegar, which will react with the baking soda to help the cake rise.

Step 7

Pour the batter into the prepared cake pan, smoothing the top with a spatula.

Step 8

Bake in the preheated oven for 40 minutes, or until a toothpick inserted into the center of the cake comes out clean or with a few moist crumbs.

Step 9

Allow the cake to cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.

Step 10

Once cooled, optionally dust with powdered sugar or serve with fresh mango slices. Enjoy your dairy-free mango cake!
