  • 1 cup Tapioca pearls
  • 4 cups Water
  • 1 large Ripe mango
  • 1 cup Coconut milk
  • 2 Black tea bags
  • 1 cup Hot water
  • 2 tablespoons Sugar
  • 1 cup Ice cubes

Directions

Step 1

Bring 4 cups of water to a rolling boil in a medium pot. Add the tapioca pearls and stir gently. Continue boiling for about 10-12 minutes, or until the pearls float to the top and are chewy but not mushy.

Remove the pot from heat, cover, and let the pearls sit for an additional 2-3 minutes. Drain and rinse the tapioca pearls under cold water. Set them aside.

In a heat-proof bowl or mug, steep the black tea bags in 1 cup of hot water for about 3-5 minutes. Remove the tea bags and stir in the sugar until dissolved. Let the tea cool to room temperature.
