Ingredients

  • 2 large ripe mangoes
  • 400 ml coconut milk
  • 200 ml almond milk
  • 50 ml maple syrup
  • 50 grams sugar
  • 1 teaspoon vanilla extract
  • 500 grams ice cubes
  • 5 leaves fresh mint leaves

Directions

Step 1

1. Peel and dice the ripe mangoes into small cubes. Set half of the cubes aside to use as topping.

Step 2

2. In a blender, combine one large mango (about half of the diced mango cubes), coconut milk, almond milk, maple syrup, sugar, and vanilla extract. Blend until smooth and creamy.

Step 3

3. Pour the mango mixture into a shallow dish and freeze for at least 3 hours or until solid. This mixture will be used to blend into finely shaved ice.

Step 4

4. Once frozen, break the solid mixture into chunks. In a powerful blender or food processor, add the frozen mango mixture chunks and ice cubes. Pulse gradually, being careful not to over-process, until it reaches a snowy, fluffy consistency.

Step 5

5. To assemble, divide the shaved ice into serving bowls or glasses, piling it up to create a mound.

Step 6

6. Top each serving with the reserved mango cubes. Optionally, drizzle some extra maple syrup over the top for added sweetness.

Step 7

7. Garnish each bowl with a fresh mint leaf. Serve immediately and enjoy the refreshing taste of your Dairy-Free Mango Bingsu.
