  • 2 cups Fresh mango, peeled and diced
  • 2 tablespoons Cornstarch
  • 2 tablespoons Lemon juice
  • 1 teaspoon Vanilla extract
  • 0.5 cup Coconut cream
  • 1 teaspoon Agar agar powder

Directions

Step 1

Preheat your oven to 350°F (175°C). Line an 8x8 inch baking pan with parchment paper, leaving an overhang on the sides for easy removal later.

In a medium bowl, combine the almond flour, melted coconut oil, maple syrup, and salt. Stir until the mixture resembles wet sand.

Press the crust mixture evenly into the prepared pan. Use your fingers or the bottom of a flat measuring cup to pack it down firmly.

Bake the crust in the preheated oven for 10 minutes, or until lightly golden. Remove from the oven and let cool slightly.
