  • 2 tablespoons Brown sugar
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 3 pieces Bay leaves
  • 1 cup Water

Directions

Step 1

In a large bowl, combine the calamansi or lime juice, white vinegar, soy sauce, chopped lemongrass, minced garlic, bay leaves, brown sugar, salt, and black pepper.

Add the chicken quarters to the marinade, ensuring they are completely submerged. Cover and refrigerate for at least 2 hours, or ideally overnight, to allow flavors to penetrate the chicken.
