Ingredients

  • 500 grams all-purpose flour
  • 1 tablespoon dry yeast
  • 1 teaspoon sugar
  • 1 teaspoon salt
  • 325 milliliters warm water
  • 3 tablespoons olive oil
  • 4 tablespoons za'atar
  • 1 tablespoon sesame seeds
  • 1 teaspoon sumac
  • 4 tablespoons extra virgin olive oil

Directions

Step 1

In a large mixing bowl, combine flour, dry yeast, sugar, and salt.

Step 2

Gradually add the warm water and olive oil, mixing until the dough starts to come together.

Step 3

Knead the dough on a lightly floured surface for about 10 minutes until smooth and elastic.

Step 4

Place the dough in a lightly oiled bowl, cover with a damp cloth, and let it rise for about 1 hour or until doubled in size.

Step 5

Preheat the oven to 220 degrees Celsius (428 degrees Fahrenheit).

Step 6

Once the dough has risen, punch it down and divide it into 4 equal portions.

Step 7

Roll each portion into a ball and flatten into a round disc about 1/4 inch thick using a rolling pin.

Step 8

In a small bowl, mix together za'atar, sesame seeds, sumac, and extra virgin olive oil to make the topping paste.

Step 9

Spread a generous layer of the za'atar mixture evenly over each dough disc, leaving a small border around the edges.

Step 10

Place the prepared discs onto a baking sheet lined with parchment paper.

Step 11

Bake in the preheated oven for 10-12 minutes or until the bread is golden brown and cooked through.

Step 12

Remove the manakish from the oven and let cool slightly on a wire rack.

Step 13

Serve warm or at room temperature as a snack or alongside your favorite Middle Eastern dishes.
