Ingredients

  • 4 tablespoons olive oil
  • 2 medium, finely chopped onion
  • 6 chopped spring onions
  • 500 grams, cleaned and chopped into small pieces lamb liver
  • 6 cups vegetable broth
  • 3/4 cup, rinsed rice
  • 1 bunch, chopped dill
  • 1 head, finely chopped lettuce
  • 2 tablespoons lemon juice
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 tablespoons cornstarch
  • 2 tablespoons water
  • 2 large egg yolks

Directions

Step 1

Heat 2 tablespoons of olive oil in a large soup pot over medium heat. Add the chopped onions and spring onions. Sauté until translucent, about 5-7 minutes.

Step 2

Increase the heat to medium-high and add the lamb liver to the pot. Cook, stirring frequently, until the liver begins to brown, about 5 minutes.

Step 3

Pour in the vegetable broth and bring the mixture to a boil. Reduce heat to a simmer and add the rice. Cover and let it cook for 20 minutes.

Step 4

In a separate pan, heat the remaining 2 tablespoons of olive oil over medium heat. Add the chopped lettuce and cook until wilted, about 3-4 minutes.
