Ingredients

  • 4 large russet potatoes
  • 2 tablespoons olive oil
  • 1 cup unsweetened almond milk
  • 2 tablespoons nutritional yeast
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 3 stalks green onions, chopped
  • 0.5 cup vegan bacon bits
  • 2 tablespoons fresh chives, chopped
  • 1 cup dairy-free cheddar-style cheese shreds

Directions

Step 1

Peel the russet potatoes and cut them into large chunks.

Step 2

Place the potato chunks into a large pot and cover them with cold water. Add a pinch of salt to the water.

Step 3

Bring the water to a boil over medium-high heat, then reduce the heat to medium-low and simmer until the potatoes are tender, about 15-20 minutes.

Step 4

While the potatoes are cooking, heat 2 tablespoons of olive oil in a small saucepan over medium heat. Add the garlic powder and cook for about 1 minute to allow the flavors to meld together.

Step 5

Drain the cooked potatoes and return them to the pot. Mash the potatoes until smooth using a potato masher or a fork.

Step 6

Gradually add the almond milk to the mashed potatoes, stirring continuously until combined and creamy.

Step 7

Stir in the nutritional yeast, cooked garlic oil, salt, and black pepper. Mix until well incorporated.

Step 8

Fold in half of the green onions, vegan bacon bits, and the cheddar-style cheese shreds into the mashed potatoes.

Step 9

Transfer the loaded mashed potatoes to a serving bowl. Top with the remaining green onions, fresh chives, and additional cheese shreds if desired.

Step 10

Serve warm and enjoy your dairy-free loaded mashed potatoes!
