  • 1 teaspoon agar-agar powder

Directions

Step 1

Start by placing the full-fat coconut milk in the refrigerator for at least 4 hours or overnight. This will help separate the cream from the liquid.

Step 2

Once chilled, open the can of coconut milk and scoop out the thick cream that has formed at the top into a medium-sized mixing bowl. Set aside the remaining liquid for another use.

Step 3

In a small saucepan, combine the lemon juice, lemon zest, and maple syrup over medium heat. Stir occasionally until the mixture is warm but not boiling.

In a small bowl, mix the cornstarch with the water to create a slurry. Add this mixture to the saucepan and whisk continuously until it begins to thicken, about 2 minutes.
