  • 1.5 kilograms beef shank (lagarto da paleta)
  • 3 tablespoons olive oil
  • 1 large onion
  • 4 whole garlic cloves
  • 3 medium carrots
  • 3 medium potatoes
  • 2 stalks celery stalks
  • 2 tablespoons tomato paste
  • 2 leaves bay leaves
  • 1 teaspoon paprika
  • 2 teaspoons salt
  • 1 teaspoon black pepper
  • 4 cups beef stock
  • 2 tablespoons fresh parsley

Directions

Step 1

Cut the beef shank into large chunks, approximately 5 cm (2 inches) each. Set aside.

Step 2

Chop the onion, mince the garlic, and cut the carrots and potatoes into large chunks. Slice the celery stalks.

In a large pot or Dutch oven, heat the olive oil over medium-high heat. Sear the beef chunks on each side until browned, about 4-5 minutes per side. Remove the beef and set aside.
