Ingredients

  • 12 large eggs equivalent egg whites
  • 1 cup, chopped roasted red bell peppers
  • 1 cup, packed spinach
  • 2 stalks, finely chopped green onions
  • 0.5 teaspoon salt
  • 0.25 teaspoon pepper
  • 1 tablespoon olive oil
  • 0.25 cup non-dairy milk

Directions

Step 1

Preheat your oven to 350°F (175°C) and lightly grease a 12-cup muffin tin with olive oil.

Step 2

In a large mixing bowl, combine the egg whites and non-dairy milk. Whisk together until well combined and slightly frothy.

Step 3

Add the roasted red bell peppers, spinach, green onions, salt, and pepper to the egg white mixture. Stir until all ingredients are evenly distributed.

Step 4

Pour the mixture evenly into the prepared muffin tin cups, filling each about three-quarters full.
