Ingredients

  • 1 cup Almond flour
  • 2 tablespoons Coconut flour
  • 2 tablespoons Psyllium husk powder
  • 1 teaspoon Baking powder
  • 0.5 teaspoon Salt
  • 1 cup Boiling water
  • 2 tablespoons Olive oil

Directions

Step 1

In a medium-sized mixing bowl, combine the almond flour, coconut flour, psyllium husk powder, baking powder, and salt. Mix well to ensure all the dry ingredients are evenly distributed.

Step 2

Slowly pour in the boiling water while continuing to stir until the mixture begins to form a dough. It should be slightly sticky and elastic.

Step 3

Add the olive oil to the dough and knead it with your hands until it is smooth and well incorporated. If the dough is too sticky, add a small amount of almond flour.

Divide the dough into 6 equal parts. Roll each portion into a ball.

Place one dough ball between two sheets of parchment paper. Use a rolling pin to flatten the dough into a thin, round tortilla, about 6 inches in diameter. Repeat with the remaining dough balls.

Step 6

Heat a large non-stick skillet over medium-high heat. Once hot, place a tortilla in the skillet and cook for about 1-2 minutes on each side, or until bubbles form and it lightly browns.

Step 7

Transfer the cooked tortilla to a plate and cover with a clean kitchen towel to keep warm. Repeat the cooking process with the remaining tortillas.
