Ingredients

  • 400 grams Extra-firm tofu
  • 1 large Red bell pepper
  • 1 medium Zucchini
  • 1 medium Red onion
  • 200 grams Cherry tomatoes
  • 4 tablespoons Olive oil
  • 2 tablespoons Lemon juice
  • 3 tablespoons Soy sauce
  • 1 teaspoon Garlic powder
  • 1 teaspoon Cumin
  • 1 teaspoon Paprika
  • 0.5 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 3 tablespoons Tahini
  • 2 tablespoons Water
  • 20 grams Fresh parsley
  • 8 Wooden skewers

Directions

Step 1

Press the tofu to remove excess moisture. Cut the tofu into 1-inch cubes.

Step 2

Cut the red bell pepper and zucchini into similar sized chunks. Peel and quarter the red onion.

Step 3

In a large bowl, mix 2 tablespoons of olive oil, soy sauce, garlic powder, cumin, paprika, salt, and black pepper.

Add the tofu, red bell pepper, zucchini, red onion, and cherry tomatoes to the bowl and toss to coat evenly. Let marinate for at least 15 minutes.

While marinating, soak the wooden skewers in water to prevent burning during grilling.
