Ingredients

  • 500 grams boneless chicken thighs
  • 2 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 3 garlic cloves, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon smoked paprika
  • 0.5 teaspoon ground turmeric
  • 0.5 teaspoon ground black pepper
  • 1 teaspoon salt
  • 2 tablespoons chopped fresh cilantro
  • 1 red onion, cut into chunks
  • 2 bell peppers, assorted colors, cut into chunks
  • 8 wooden skewers, soaked in water for 30 minutes

Directions

Step 1

Cut the boneless chicken thighs into bite-sized pieces.

Step 2

In a large bowl, combine the olive oil, lemon juice, minced garlic, ground cumin, ground coriander, smoked paprika, ground turmeric, ground black pepper, and salt. Mix well to form a marinade.

Step 3

Add the chicken pieces into the marinade and toss until they are well coated. Cover the bowl and refrigerate for at least 30 minutes, or up to 4 hours for more flavor.

Step 4

While the chicken is marinating, prepare the red onion and bell peppers by cutting them into similar-sized chunks.

Step 5

Preheat a grill or grill pan over medium-high heat.

Step 6

Thread the marinated chicken, onion, and bell peppers onto the soaked wooden skewers, alternating between each ingredient.

Step 7

Place the skewers onto the preheated grill and cook for about 10 minutes on each side, or until the chicken is cooked through and slightly charred.

Step 8

Remove the skewers from the grill and let them rest for a few minutes before serving.

Step 9

Garnish with chopped fresh cilantro. Serve immediately.
