Ingredients

  • 250 grams All-purpose flour
  • 1 teaspoon Salt
  • 80 grams Vegetable oil
  • 70 milliliters Cold water
  • 200 milliliters Coconut milk
  • 2 pieces Egg yolks
  • 2 leaves Pandan leaves
  • 150 grams Brown sugar
  • 1 tablespoon Cornstarch
  • 2 tablespoons Cold water (for cornstarch slurry)

Directions

Step 1

Start by preparing the Kaya filling. In a saucepan, add coconut milk, brown sugar, and pandan leaves. Heat over medium heat until the sugar dissolves completely and the mixture is warm. Remove from heat.

Step 2

In a bowl, whisk the egg yolks and slowly add the warm coconut milk mixture, stirring constantly to avoid curdling.

Step 3

Return the mixture to the saucepan, remove pandan leaves, and cook over low heat, stirring constantly until it thickens.

Step 4

Mix cornstarch with cold water to make a slurry, then add it to the saucepan. Continue stirring until the Kaya thickens more. Set aside to cool.

For the pastry, mix all-purpose flour and salt in a bowl. Add vegetable oil and mix until a crumbly dough is formed.
