Ingredients

  • 2 pounds Russet potatoes
  • 1 cup Unsweetened almond milk
  • 2 tablespoons Olive oil
  • 2 medium Garlic cloves
  • 1.5 teaspoons Salt
  • 0.5 teaspoon Ground black pepper
  • 2 tablespoons Fresh parsley

Directions

Step 1

Peel and cut the russet potatoes into evenly sized chunks, approximately 2 inches in size, for even cooking.

Step 2

Place the potato pieces in a large pot and cover them with cold water by about one inch. Add 1 teaspoon of salt to the water.

Step 3

Bring the pot to a boil over medium-high heat and then reduce to a simmer. Cook the potatoes for 15-20 minutes or until they are very tender and easily pierced with a fork.

Step 4

While the potatoes are cooking, peel and mince the garlic cloves.

Step 5

Once the potatoes are tender, drain them in a colander. Return the empty pot to the stove over low heat, add the olive oil, and sauté the minced garlic until fragrant, approximately 1-2 minutes.

Step 6

Return the drained potatoes to the pot with the sautéed garlic, and mash the potatoes using a potato masher until smooth.

Step 7

Gradually add the unsweetened almond milk, continuing to mash, until the desired creamy consistency is reached.

Step 8

Season the mashed potatoes with the remaining 0.5 teaspoon of salt and 0.5 teaspoon of ground black pepper. Stir well to ensure even seasoning.

Step 9

Finely chop the fresh parsley and add it to the mashed potatoes, saving a bit for garnish.

Step 10

Serve the dairy-free Kartoffelbrei hot, garnished with the remaining parsley for a fresh and colorful touch.
