  • 2 pounds Oxtail
  • 8 cups Water
  • 1 tablespoon Salt
  • 2 tablespoons Cooking Oil
  • 1 large Onion
  • 4 cloves Garlic
  • 1 cup Peanut Butter
  • 2 teaspoons Annatto Powder
  • 2 medium Eggplant
  • 1 cup Banana Blossoms
  • 1 bunch Bok Choy
  • 1 cup Green Beans
  • 1 teaspoon Ground Black Pepper
  • 2 tablespoons Soy Sauce or Tamari (for gluten-free)

Directions

Step 1

Rinse the oxtail pieces under cold water. In a large pot, combine the oxtail, 8 cups of water, and 1 tablespoon of salt. Bring to a boil over high heat, then reduce the heat to low and let simmer for about 90 minutes or until the oxtail is tender. Skim off any foam that rises to the surface.

Step 2

While the oxtail is cooking, slice the onion and mince the garlic. Peel and slice the eggplants into thick rounds. Rinse the bok choy and trim the ends of the green beans.

Step 3

In a separate large pan, heat 2 tablespoons of cooking oil over medium heat. Add the onions and garlic, sautéing until the onions are translucent.

Add the sautéed onions and garlic to the pot with the simmered oxtail. Stir in the peanut butter and annatto powder, mixing well until the peanut butter is fully dissolved in the broth.

Finally, add the bok choy to the pot and stir gently. Cook for another 5 minutes or until the bok choy is wilted and tender.
