Ingredients

  • 500 grams All-purpose flour
  • 10 grams Active dry yeast
  • 75 grams Granulated sugar
  • 1 teaspoon Salt
  • 250 milliliters Almond milk
  • 75 grams Vegan butter
  • 2 tablespoons Ground cinnamon
  • 100 grams Brown sugar
  • 50 grams Vegan butter (softened, for filling)
  • 100 grams Powdered sugar
  • 1 teaspoon Vanilla extract
  • 1 tablespoon Water

Directions

Step 1

In a small saucepan, heat the almond milk and 75 grams of vegan butter until warm and melted, but not boiling. Let it cool until it's just warm to the touch.

Step 2

In a large mixing bowl, combine 500 grams of all-purpose flour, 10 grams of active dry yeast, 75 grams of granulated sugar, and 1 teaspoon of salt. Mix well.

Step 3

Add the warm almond milk mixture to the dry ingredients and stir until a loose dough forms.

Step 4

Knead the dough on a floured surface for about 5-7 minutes until smooth and elastic. If the dough is sticky, add a little more flour as needed.

Step 5

Place the dough in a lightly oiled bowl, cover with a clean kitchen towel, and let it rise in a warm place for about 1 hour or until doubled in size.

Step 6

Once the dough has risen, roll it out on a lightly floured surface into a 1/4-inch thick rectangle.

Step 7

Spread 50 grams of softened vegan butter evenly over the dough.

Step 8

In a small bowl, combine 100 grams of brown sugar with 2 tablespoons of ground cinnamon. Sprinkle the mixture evenly over the buttered dough.

Step 9

Starting at the longer edge, roll up the dough tightly, then cut the rolled dough into 12 equal sections.

Step 10

Place the rolls in a greased baking pan, cover with a towel, and let them rise again in a warm place for 30 minutes.

Step 11

Meanwhile, preheat your oven to 180°C (350°F).

Step 12

Bake the rolls in the preheated oven for 20-25 minutes or until golden brown.

Step 13

While the rolls bake, prepare the glaze by whisking together 100 grams of powdered sugar, 1 teaspoon of vanilla extract, and 1 tablespoon of water until smooth.

Step 14

Once the rolls are done, let them cool slightly before drizzling the glaze over them. Serve warm.
