Directions

Step 1

Begin by placing the cashew nuts in a blender or food processor. Pulse them until they turn into a fine powder. Be careful not to over-blend, as this might release their oils and turn them into a paste.

In a heavy-bottomed pan, combine the sugar and water. Heat the mixture over medium heat until the sugar dissolves completely, stirring occasionally.

Increase the heat slightly and bring the sugar solution to a boil. Let it cook until it reaches a one-string consistency. To check, dip a spoon into the syrup and touch it between your thumb and index finger. When you pull them apart, a single string should form.
