Ingredients

  • 500 grams Bottle Gourd (Lauki/Kaddu)
  • 400 ml Coconut Milk
  • 250 ml Almond Milk
  • 100 grams Sugar
  • 4 Cardamom Pods
  • 50 grams Cashew Nuts
  • 50 grams Raisins
  • 0.25 teaspoon Saffron Strands
  • 1 teaspoon Rose Water
  • 1 tablespoon Coconut Oil

Directions

Step 1

Peel the bottle gourd and grate it using a grater, discarding any large seeds. Measure out 500 grams of grated bottle gourd.

Step 2

Lightly crush the cardamom pods to release flavor.

Step 3

In a thick-bottomed pan, heat the coconut oil over medium heat.

Step 4

Add the cashew nuts and sauté until golden brown. Remove them with a slotted spoon and set aside.

In the same pan, add the grated bottle gourd. Cook while stirring occasionally for 5-7 minutes or until it softens and changes color.

Add the coconut milk and almond milk to the pan. Stir well and bring the mixture to a gentle simmer.
