Ingredients

  • 2 cups short-grain rice
  • 2.5 cups water
  • 2 tablespoons vegetable oil
  • 1 medium, finely chopped onion
  • 1 medium, grated carrot
  • 0.5 cup green peas
  • 2 stalks, finely sliced green onions
  • 2 cloves, minced garlic
  • 3 tablespoons soy sauce
  • 2 (optional) egg
  • 1 teaspoon sesame oil
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper

Directions

Step 1

Rinse the short-grain rice under cold water until the water runs clear.

Step 2

Combine the rice and water in a rice cooker and cook according to the manufacturer's instructions. If you don't have a rice cooker, combine rice and water in a pot, bring to a boil, then cover and simmer on low for 15 minutes or until the rice is cooked and water is absorbed.

Step 3

Spread the cooked rice on a baking sheet and let it cool for at least 30 minutes, preferably in the refrigerator. This helps the rice firm up and is crucial for making good fried rice.

Step 4

Heat 1 tablespoon of vegetable oil in a large non-stick skillet or wok over medium-high heat.

Step 5

Add the chopped onion, grated carrot, green peas, and sliced green onions, and stir-fry for about 5 minutes until the vegetables are tender.

Step 6

Add the minced garlic and stir-fry for another minute until fragrant.

Step 7

If using eggs, push the vegetables to one side of the pan, add a bit more oil if needed, and scramble the eggs until fully cooked, then mix with the vegetables.

Step 8

Add the cooled rice to the skillet. Drizzle with the remaining tablespoon of vegetable oil. Stir-fry the rice and vegetables until well combined and heated through, about 5 minutes.

Step 9

Pour the soy sauce over the rice, and drizzle with sesame oil. Season with salt and black pepper to taste. Stir everything thoroughly to ensure the rice is evenly coated and has absorbed the sauces.

Step 10

Check seasoning and adjust if necessary, then remove from heat.

Step 11

Serve hot, garnished with additional sliced green onions if desired.
